How does the Vauxhall Mokka's Electronic Stability Program (ESP) work?

I recently bought a Vauxhall Mokka and noticed that it has an Electronic Stability Program (ESP). I'm not familiar with this feature and I'm curious to know how it works and if it's something I should always have turned on.
